The best way is from iPhone to iPhone. No cables no adapter needed. Just the 2 iPhones next to each other and you’ll be good to go in a matter of mins.
It creates a direct wireless connection between the 2 which is very fast. No access point needed!
 
You connect the phone via USB to your Mac computer. Open a finder window on the Mac, your phone will show up as a device on the left side of the finder window, select your phone from finder window. Finder will then display much of what iTunes use to do. You can then sync or backup from Finder. I could be wrong about this, but I think macOS 10.13 was the first version to incorporate iPhone sync and backup in Finder.

Ok I think I'll use this method to transfer from my 11 Pro Max to 13 Pro Max. Can you do selective transfer, eg everything except photos for example

Also, what the best method to Backup to my Mac (without using iTunes if possible)

Everything is copied over, no possibility of selective copy. The fastest way to backup would be to physically connect your phone to the computer and use Finder to do the backup. Do an encrypted backup it will ensure everything is backed up.

It basically clones your phone. Everything will be exactly the same. Pics ,text, notes, everything.
You'll maybe have to re enter your password for certain apps like banks, password manager, etc but that's about it.
At the end of the transfer you will even have the option to delete the old phone if you wanna sale it or give it to a family member.

Can you do selective copy/backups, like voice recording or notes files only?
Do not recall the price and I believe you can select what apps and the data on the apps you want to put on the new iPhone . The files I am not sure .
 
Ok, I have an issue with using iTunes to back up my iPhone 11 Pro Max as my drive is too small as I have too many photos which will exceed the space on my drive. I do have an external SSD drive though, is it possible to use iTunes to back up on the external SSD? I am running MacOS High Sierra.

One other question, can one get direct access to the photos and Voice memo files of the iTunes back up?

Otherwise I was thinking of using Image Capture application to copy the photos this way. But how does one copy the Voice memo files? (without having to use a paid for application like iMazing, if possible)
 
Are you able to temporarily move data from the laptop to the SSD to make enough space for the full phone backup? That would be a much better way to do it than hacking around with different apps to try to get the phone backup in smaller pieces.

Listen Apple will lone you iCloud storage to back up your device for transfer

But QuickStart is the easiest way just put the two device side by side right out of the box then follow the prompts

Thanks. I didn't want to mess with iTunes, can't stand the user interface etc. So I bought a 5x device licence of iMazing. Did the job and saved a lot of time, was able to select my external SSD as the target backup drive

Thanks. I don't like having any photos on the cloud. Agreed, Quickstart is the best option
