This is ridiculously simple to fix and you don't even need SSH.

1. Download iFile. It's shareware so you could use it for free.

2. go to /var/stash/Applications/MobileSMS.app

3. look for Icon-Small.png, Icon-Small@2x.png, icon.png and icon@2x.png, click edit and then the little arrow in the lower right, then --> copy
(you might not need all 4 but this is what I did and it works perfect.)

4. go to var/stash/Applications/biteSMS.app and select edit and then paste.

5. reboot/respring

Bam, you have just replaced the ugly pink icon with the nice default apple retina one. Total time invested 5 minutes if you include installing iFile from a slow ass cydia.

tl;dr: copy the icons from your MobileSMS.app app into BiteSMS.app

Hey everyone, I found a fix. The original package I made replaced the icon if you downloaded biteSMS from xSellize. The people who had the problems downloaded it from BigBoss. There is a difference in the file structure in the two packages. My updated package will replace the icon whether you downloaded from xSellize or BigBoss (hopefully).

I am letting some people try out the fixed package before I let it out to the world just in case it doesn't work either.

Sounds good man. Any idea if that package will change the small icons on the lockscreen as well? And whats your thoughts on creating a package with all the icons that the guy created? Also what happened to my ROGERS LOGO :p

Sorry man but getting this main biteSMS icon fixed is my biggest priority right now. Over 1200 people have downloaded it and a lot of them are probably pissed off right now.

That's my 3rd package on Cydia. I learned how to do it 2 days ago.
 
Here is the update. It should work for everyone now. Remember to activate it in Winterboard.

Thank you. It worked perfectly and was very simple to do. I refuse to install WinterBoard so this is definitley the best solution for me.

Yes definitely the way to go, winterboard sucks right now. I did a battery drain check and even only with winterboard installed not even open my batter went from -124A to -264A, thats ridiculous. But the question now, is how to changes the small bitesms icons on the lockscreen?

I would assume its the file called Lock-screen-QR.png. You would have to SSH in and get that image and change the color on the image. Either that or take the Messaging icon and resize it to the same size as Lock-screen-QR.png
and overwrite it with the same file name. Too much work for me to do since it doesn't bother me that much, but if someone else has the energy then feel free!

You need to change these six files for complete replacement. Mine looks EXACTLY like the stock messaging application. I even changed the names to say Messages everywhere instead of BiteSMS...

Icon-small.png
Icon-small@2x.png
Lock-screen-QR.png
Lock-screen-QR.png

What I did was use the Apple Icon.png to replace the BiteSMS Icon.png & Icon@2x.png and then use the Apple Icon-small.png to replace the other 4.

EDIT: Ignore the e-mail links.

How did you change the icon name to say messages?
