As far as U.I customizations are concerned, what I really want to see, is:

* Wallpapers on home screens(Dimming options, like what Winterboard has).

* A proper white-on-black interface throughout the U.I(like the iPod has, when you double tap the album art). I don't mean the negative effect, that the 3GS' accessability provides throughout.

* An option to remove the dock image.

ah ..

I thought so too for a second, but then I re-read the thread and no one was talking about OSX. So then I was all like  with maybe just a splash of  if I wasn't so tired at work right now.

Isn't the iPhone OS a light version of Leopard? Anyways... I meant that I'm getting bored with the pinstripes (like in Settings) and the navigation bar is a light blue... I think it should be a metallic gray like the desktop Safari. I don't know. I wouldn't mind a graphite theme.

Yea I too don't like the way the themes change the icons. It makes it more confusing! I like the stock icons.

I think the one thing I would use from jailbreaking is the 5 app dock! That way I can keep all the main phone type apps at the bottom. (phone, mail, messaging, safari, and iPod)
