I still carry cash and pay mostly with cash. I carry around $150-300 and go back to the ATM when I'm down to $40-50.

In Australia, many restaurants and shops won't take debit or credit unless you spend over $10. Some big chains like Starbucks and McDonalds don't have a limit, but if you go to a cheap Chinese restaurant, a food court, or a decent café, you need to pay with cash.

Australia is a complete rip-off, so I'm guessing the transaction fees are really high for retailers, hence the minimum spend.

Same in the UK. You have to spend 5GBP minimum to use a card, which works well for everyone but me as I usually buy some random crap to make up the cash.
 
Many large retailers here don't require a signature for purchases under $25. Otherwise, no one ever checks signatures. Only the Apple store asks for ID.

Thats true, its something I really noticed in the US.

Or we could move to a chip-and-pin system like Europe.

Unless you're a foreigner pretty much everywhere seems to have chip and pin nowdays.
