They can tell how many were sold through the App Store through downloads/receipts.

But do they keep tabs on their customers? If they did not have a receipt for me, would they still know my computer is running Lion from a database on their end?

Just trying to see the extent of the networking here.

Yes they can tell what os you are running! But why ask? Go spend the cash and buy I legit!

I did, I'm just interested in the networking portion.

Does Apple have a database on their end that shows how many Macs are running Lion right now. 🙂

Apple has never bothered with keys etc because it's a hardware company for the most part. Do they know who is running what? Yes they do.
