Changing icons in Lion is painfully simple! I changed most icons in my dock as you can see below.

All you need to do is find your program in finder. Right click it and select "Get Info". Look for the little icon in the upper left corner of that window (where my red arrows are pointed). Click it once until it is slightly highlighted.

I usually get my icons off the internet (in .png or .icns formats), or sometimes I make my own. I find the best way to have them all work is to download the file then drag it into safari, and THEN right click and copy it. I'm sure pulling it directly off the internet would work too. Sometimes the files just don't work off my hard drive for whatever unknown reason so I just do this to be safe.

Once you've copied it, go back to the "Get Info" and use paste (which is command and v). Just make sure you erase it from your dock and then re-drag it to see the new icon. Voila!

This can change any folder icon, app store purchase icon, mac standard program icon etc etc. I changed almost all of mine including launchpad, microsoft office, iTunes, mail, system preferences, world of warcraft, angry birds, stickies etc.
