So, if you only had a S3 ceramic what would you do in my situation?

I absolutely love the ceramic.

It has 25 months left on apple care.

I don’t think selling it for $400-500 is worth it. I would surely get that in return from wearing it.

If it came down to keeping the ceramic and having to step down to the aluminum model I would step down to the aluminum model and keep the ceramic..
 
I had the S2 Ceramic and sold it when I moved to the Series 3 Hermes. I liked the Ceramic material, but hated the fact that Apple never made any Ceramic specific watch bands (most band combinations looked awful in my opinion). That made it easy for me to leave. Sticking with the Hermes for series 4 as well. Can't wait till Friday!
 
Apple will probably release the Edition model in the Spring.
Apple always releases something in the Spring, and we know that I won't be a "SE" or "C" model of the iPhone because of the XR, and we know it won't be iPads.
I'm not getting a Series 4 until then. My Series 3 Ceramic is way more resistant than stainless watches.

Have they done this with watch before? Might be the ceramic was scrapped as it can’t conduct for ECG.

Why wouldn't it be able to conduct for ECG? The point of contact for ECG is the Digital Crown, and aluminium doesn't conduct well yet there's an aluminium model.
 
Perhaps they can't make ceramic work for the new form factor? The edges taper even more into the screen now, so perhaps Apple weren't prepared to have the same step as in the Series 2/3?
