I just wanted to leave this here in hopes it can help anyone who's like me. I was young during the peak of the ipod time but I never owned one and have just gotten into them in the last 2 years. I finally found my perfect model, then Nano 7, and wanted to put videos on it. All the internet told me that the convert tool was gone after Catalina, but this is not the case. Handbreak is inefficient and complicated for just this use.
If you import the video by opening the file with apple music (it usually refuses to drag and drop for me), then close out the player and search your library for the file, then you can go to the menu bar and select file. Under file is convert, which opens a submenu with the good old setting for ipod/iphone. It works very well and efficiently, and duplicates so your original file is undisturbed. My M4 MBA took about 2 minutes to convert a 25 minute long 4K video (7.8ish GB) I had filmed of me and loved ones on Halloween. After conversion it was just 265mb!
