Am trying to create reminders from Apple Mail on Big Sur. Used to be you could invoke the share sheet to do this. That does not look like it works anymore. Would prefer not to have to use AppleScript or Automator to do this, but there may be no other way. Anyone have workarounds?

I'm not familiar with share sheets, but unlike Microsoft Outlook, the Apple applications do not integrate the mailbox, calendar, tasks, etc.

Mac OS includes the Reminders app for this purpose. I do not believe that there is any feature that is built in to Mail to accomplish this.

You can just drag the email message and drop directly onto Reminders?

Yes but when you are in full screen mode, it’s not always convenient to do that.

I did discover the answer, however: you have to control-click the subject line of the message to get the share sheet. From there, you select Reminders as your share target. An odd way to do this but it works.

Unfortunately "Reminders" isn't offered in my Share menu in Mail App (Version 14.0 (3654.40.0.2.32), macOS 11.1) I also cannot add it in System Preferences. Any idea how I can solve the issue?

The control-click on the subject line is really weird and hard to be discovered! Even then you still need to hover the curser to Share, then select Reminder. Quite a lot of chore. I wish there's an easier way.
