i use dark mode only for menus - light mode is on everywhere else.

This. The menus do stand out, so dark mode is okay for that. But for the content of most windows, white on black to me makes things less readable. The only exception is Photoshop but that is because it is an image instead of text.

I love dark mode. The room that my set up is in can be darker most of the day so its nice to have a screen thats not jarringly bright without having to dim the display and ruin the color saturation, which is important for me as I’m a Photo/video editor.

I like Dark Mode and use it. I suppose it's just an aesthetic election.
But I have to live with a few glitches here & there...
The most problematic "bug" (I think it's a bug) for me is an irritating inconsistence with Highlight colour. If you leave default blue highlight colour, it works strangely in Preview, highlighting selected text on white paper with a different, darker blue; selected text turns illegible. Doesn't happen in Safari or Pages -for example-.
A few more problems: https://eclecticlight.co/2018/10/09/dark-mode-bugs-in-mojave/
Last updates haven't solved this. I wait patiently. :(

I really like Dark Mode. But, it's quite jarring when you have dark mode enabled system-wide and then open an app or website that has a large white element/background - not good for the eyes or the brain.

This is the same reason I tend to use dark mode only when I'm using Apple and supported apps. Most of the time I just use dark mode on specific apps. Mail for instance, is awful with bright white backgrounds.

I had it for a month or so on my cMP and Mini but I just can’t get into it. Had to switch back to Light Mode today. Just not for me

Apple did and excellent job on it. I've been using it for a few days since I discovered that I can use light within writing areas on my apps. It is stunning, love it.
