Have a few Apple stores withing my area and you get a mix from the very helpful to the arrogant I'm an iDevice god and don't tell me I'm wrong. I have walked into the one closest to me and there is one "Genius" (loose term) I will flat out tell them not to send to me.
It's a mix
You've summed it up very accurately.

With four Apple stores nearby I've noticed a trend. It's easier to notice it because I buy so much from Apple that I frequent these stores often. It seems like the Genius that cares, is knowledgeable and gets the job done doesn't stick around for long. Apples dismal pay, noisey environment and arrogant entitled customers must drive them off. The turnover is much greater than it was just a few years ago. Given the higher paying jobs that are available in my area, it's got to be hard for Apple to find employees.

Clearly apple is the only business in the world with those types of consumers. I have two apple stores equidistant from me and both stores have helpful employees. I purchased my 6s shortly after the launch by making a reservation. I got to the store and it was packed to the gils. Yet the genius who took care of me, who was clearly under the gun, was nothing but helpful and professional and spent about 20min helping to complete the transaction. You'll find bad apples(pun intended) in any store. Apple is not immune to them. Unlike apple stores which are fairly easy to find, getting a bad apple at a car dealer is much, more annoying.

I've had nothing but good experiences at the Apple stores here. In fact sometimes they are too nice to the point of almost being obnoxiously nice. Not complaining about that though.
