Based on sales of the Kindle Fire, it is probably a good business decision for Apple to sell a 7" device. But, I want my ipad at 9.7.

If there's to be an iPad with a smaller screen, that would require every app and the core OS to have resized user interface elements, toolbars, etc, as the shrunken screen would mean the existing UI elements will also be too small.
Basically, they'd have to be sized up to remain 'finger friendly' in terms of their size in millimeters.
Why do people think this? Your iPad and iPhone run the same operating system. They use the same basic UI controls and icons. Hold them side by side. Notice that, in real world millimeters, the iPhone's icons and other UI elements are significantly smaller? Well, they are. Significantly. Is the iPhone completely finger-unfriendly? No. And as long as a 7" iPad's UI elements don't shrink smaller than an iPhone's, it just won't be an issue.

Yes.

But include a iPhone capable camera.

I have a Kindle Fire and one thing stood out about it, it was the best size for one handed eating/etc while reading mail/surfing. It just felt more natural and looked it as well.

It is also pocket capable in men's dress pants, let alone a jacket inner pocket.

If you find yourself wanting a smaller iPad, but not a Touch, then you either want it solely because you think that'll lower the price to a point you're more willing to pay, or you're simply wrong thinking it is better in any other conceivable way. Because it isn't.
Pretty amazing how you know everybody's useage model.

I will replace my iPad 1 3G with an iPad 3 3G.

If I could get the 7" version for the SAME price as the 10" version, I would. I would even be willing to pay more. Because it fits my needs better.

Smaller frequently does not mean cheaper.

I have lusted after the kindle fire, love the size, but it doesn't do everything I need. And it doesn't have 3G, and I don't want to carry around a mifi, and I don't want to pay an outrageous surcharge to carry a smartphone I can tether to.

Please, please Apple.

Your mileage obviously differs.
