It doesn't "choke" when you need it most. You're just perceiving the normal performance as being less than optimal when you become stressed and want things to work faster. It's a psychological thang.

The iPhone OS, isn't always as responsive as I would like, but its still the best mobile OS currently available ( haven't tested the PRE)

Actually, the reason I think the iPhone is such a poorly constructed piece of **** probably has something to do with the fact that I've had to have mine replaced six (or seven?) times. Good call. ;)
 
My iPhone has performed consistently and problem free for the most part.
I have at times dropped a few calls but is that the iPhone's OS fault - doubt it. My old phone did the same thing. When running some apps, it crashes - again is that the phone's fault or poorly written apps? My guess is poorly written apps. Do I use up too much of the resources and then expect it to be snappy? No and I use iStat to view the free resources when things seem kind of wonky.

Is the OS perfect, no far from it, but its a stable environment that could have improved memory management and better protection from buggy apps but all in all its much much better then BB or windows mobile.
 
Hahaha. I'm not trolling. I may have exagerated a bit, but not too much.
EDIT: Turns out... it took about 25 seconds. I just now tested it.
Okay, so even if the majority of it's Apple's fault like you stated, not all of it is fault of the OS.
