I've used VNC through may apps in the past to control my Macs, but I'm wondering if I am missing something here? Everything is so integrated within my Apple devices, yet I'm not finding an obvious answer to my question. It seems like I should be able to access a list of my devices on my ID that are connected to the internet on Wifi or Cellular (like in iCloud) and simply be able to access them and control them through Remote Management. Am I asking for too much here?

In Remote Management I have enabled myself as the only user to be able to fully control my iMac and MB on both devices using my contact (name) Apple ID. I was hoping IOS and iPadOS had a natively built in Remote Management feature so I didn't have to use third party apps. Specifically my iPad since it has a much larger screen. I do not want to do this within my home, as screen sharing handles that. I want to access it from on the road.

My iPad is cellular so it is always online, as is my iPhone. At home my iMac, MacBook, and Apple TV are always on wifi connected and ready.

Yes, you need a third party VNC client app, and way to route it back to your Mac at home. It's not difficult but it's not built-in. For the routing part, consider either Tailscale or Zerotier (both of which are free) for small numbers of users.
