Are these little pictures only able to go to other Watches or can they be sent to phones? I don't think I saw an answer either way. Obviously, heartbeats/taps can only go to watches, but pictures shouldn't be limited....

based on the hands on videos, it looks like watch to watch only for that feature.

I think it'll take a little more than a flower to induce them to become interested in the Watch, but there's plenty of opportunities for that when they see Apple Watch wearers unlock the hotel door with it, etc.
I'd bet on seeing the personal one-one communication features showing up in iOS 9...especially if iPhone 6s has force touch.

As arm said it was shown in the handson. Basically when you select a contact you get three icons at the bottom if they have the watch and two if they don't. . The middle that looks like a hand pointing is to draw a picture.

By the time you're close enough to see someone unlock a hotel room door with their watch, I assume technology is the last thing on your mind... 😉
