I would like to buy Civ 4 and Spore with all the expansions. However, apparently, for Spore Galactic Empires and certain Civ4 expansions, you need the CD/DVD in the drive to play.

Now, for me, that's a deal breaker, this hugely annoys me. Unless there's a way to make the games work with a mounted disc image ? Anyone ?

Generally speaking some games will work with a mounted image and others will not ... but also those issues tend to into a gray zone of legal use and are often frowned upon in terms of discussion.

When it comes to PC games, GameCopyWorld.com offers No-CD patches with the caveat that you own the game. I don't like lugging game CDs with me on trips as I constantly travel. Does something like exist for Mac? Don't know as the last Mac game I played WoW did not require a CD (because MMOs don't require CDs). The next big thing coming down the pike for Mac is Steam, and none of those games require the CD.
