Im planning to upgrade the firmware on my MBP.

One concern I have is, is EFI firmware universally safe to run on all MBP models?

And, is a firmware update include all changes in the previous version of updates? Or, on the other hand, should I install the update one version after another until it's full up to date?

Use Software Update to get the proper EFI updaters for a computer. I believe they will only update the computers that they are designed for. And within that parameter you should be safe, and will only need the single updater.
