Well, as it happens, I have just prepared two further mugs of coffee. One for the carer (the substitute carer, who likes coffee) and one for myself. My preferences are well known at this stage: Coffee. Ethiopian. Hot.

And that is a warm salute to an impressive individual in a much admired (in these threads at least) TV series.

Picking up on the Star Trek coffee ordering theme (Picard & Janeway), I wonder how long it will be before we can say "Hey Siri, Nespresso vivalto."

For those of us with less refined palates, this may not be that far away.

Hm.

Whatever about Captain Janeway (and yes, @SandboxGeneral did take the time to remind me that she loves her coffee, a plus to my mind), I doubt anything that serves Nespresso will be welcomed too warmly on these threads. But, you never know.

All of new Hario pour over and associated equipment have arrived. I'll be practicing with it tomorrow.

I know the feeling. I've been without quality beans for almost 2 weeks now. 🙁 The batch of Whole Latte Love beans was okay but I didn't like it in espresso form so I took them into work and used them in French Press and it tastes just fine that way. My last order of the Atomic Coffee Roasters "French Roast" turned out to be a dud batch and tasted just awful no matter what; adjusting the dosage, the grind settings and even the tamp pressure. Something went wrong with the roast or the blend or both, it was just bad and undrinkable.

I finally received a new order yesterday of the Atomic Coffee Roaster "Diesel" blend and it was superb. I just finished my first morning cup of it right now. A new batch of the "French Roast", along with the Ethiopian beans are set to arrive today too.

It was terrible not having good coffee in the home for that long and I'm not sure how I survived either; but I did! 😛

Hm. Interesting that the last blend of "French Roast" was brutally bad; it will be even more interesting to test whether the new batch (of French Roast) represents an improvement. Glad to learn that the "Diesel" blend worked well and was of the desired standard.

And, ah, splendid: Ethiopians beans. Have they also come from the Atomic Coffee Roaster company?

Yes they are also coming from the Atomic Roasters. It will be my first experience with this particular blend and Ethiopian beans in general too.

They probably won't arrive until 6 to 8 hours from now and before then I will practice with what I have left of the Whole Latte Love beans on the new Hario pour over. I'll be practicing technique and timing more than drinking full cups I imagine until the Ethiopian beans arrive.

Bear in mind that the Ethiopian beans are a lot less 'full-bodied' than what you have been used to, and bear in mind, too, that they tend to have been lightly roasted (I assume that you are not roasting your own). Therefore, as I have already explained in an earlier post, you may need to use a bit more of them, as otherwise, you may find the coffee tastes 'weak' and perhaps 'insipid'.

I have come to love those 'clean, bright, clear' notes, which, at their best, are also 'smooth' and sometimes 'sweet'. Likewise, I realise that I don't much care for that 'muddy' note (let alone a sort of tannic bitterness) that you can get in some coffee.

Anyway, I hope you enjoy them when you receive them.

Duly noted. I expect there will be some experimentation to get it "just right".

While I quite enjoy a full bodied flavor in espresso, when it come to Press, and most likely pour over too since they're quite similar, I also enjoy the medium to light roasted coffees as well.

Which model? La Pavoni's are known to be difficult steamers...small boiler, the steam arm is oddly positioned and the stock tip is horrible. Obviously, whatever technique you had learned on your prior machine is not working on your new machine. Go back to basics and start the learning over.....very cold milk, start with skim, focus intently on the position of the steam tip, and on your machine probably start with a very small amount of milk, ie don't hit it with 10 oz of milk in a 20 oz pitcher.

If you post a picture of your foam, I can probably offer more helpful suggestions. I very rarely make a white coffee, but I have a La Pavoni (the "Professional") and may be able to offer some suggestions.
