I've just turned off wi-fi and put the iPhone into airplane mode - I can still view favourite/favorite notes. I will keep a lookout for the function being removed in future updates.

I suspect you've already lost the functionality. The following was posted in the Evernote forums earlier today. Dave Engberg is the CTO so he knows what he's talking about and I think it could explain the behaviour that you're seeing.

If you have a Free account, Evernote will tend to store notes that you've viewed once on the device, so that you can view them again even without a network connection. You may not be able to view notes offline that you haven't accessed on the device. If you are Premium, and you configure a notebook for Offline support, it will always store the notes from that notebook on the device, even if you haven't previously viewed them there.
