I am absolutely loving using OneNote...
OneNote has to follow the same laws regarding privacy as any other service, as mentioned in their privacy statement:

Good to know certainly, I'm not one of the tin foil hat wearers though so happily am OK with it.
Right... not into the tin foil either, but this topic is about privacy as it relates to note apps. Personally, I prefer Evernote for a couple reasons. One being the 'notepad' that is always present in the Menubar on my MacBook and the other being the Informant Evernote plugin, both for iOS and macOS. I did however turn off the machine learning setting, I'd prefer not to 'share' beyond what's legally required.

So glad I dumped that bloated nagware of a product.

I'm using Apple notes now. A focused, well executed product.
SimpleNote.com is just awesome. I have been using it for years.

The best part is anyone... anywhere in the world... using any computer can sync into my notes.

Their privacy statement is for the most part standard, except they apparently don't host subscriber data -- which means you're actually subject to the privacy agreements and security practices of multiple companies, the service provider and the mysterious 'trusted third parties':

I always stored my notes on my iPhone with Notes.app and people said "screw Notes, just use Evernote and you can access your notes anywhere".
Then they added iCloud support and people said "too late, I switched to Evernote".
Then Apple added collaboration support for Notes and people said "who cares, I can already do this with Evernote".
And through all that I continued resisting the urge to ever create an Evernote account.
Today I'm proud to know I made the right choice.

Keeping in mind that the court orders to subpoena your Note data from Apple and any other note app provider are identical, and equally legally binding.

Nope, and you need to close your Evernote account from their website. They'll be able to see that, for sure.

I am sure they have some kind of policy to retain that information even if you delete it, and stored in backups somewhere.
I know you probably have nothing to hide but its the principle when people think that data is "deleted" but in reality its just hidden
away from them.
 
I feel that much of these apparently good companies are just pure evil and we realize it only too late. If you want privacy use paper.

Pretty much. I wouldn't be surprised if "ALL" of the big companies are data mining our data. Whether it is a note or calendar event. They all are in some way or fashion going through it. As a user that is something I have come to expect and as a result I have chosen to let them. If you want to scan my email or notes in order to provide a better experience for me the end user that is fine.

IF I want something that is not to be read by anybody eyes but mine, paper it is. Even then that can fall into the wrong hands and read.

Keeping it all in my head! They haven't found out how to scan my brain for the dirty little thoughts! :):D

I have been trying out different note services because I want to leave Evernote, but I have yet to find something that meets my needs like Evernote does. Yes some do some of the stuff I need, or for that matter most of what I need. But there is always something that is missing and it becomes an issue for me. So for now I will stick with Evernote.

You can try an App called MyWonderfulDays they sync the content to iCloud people seem to trust it

I'm fully aware of that. But the various Data Protection Acts around the world ought to dictate that it's removed after a certain period when it is no longer 'required', and I think a backup for backup's sake is not a 'required' use case. I'm not naive enough to always think it is deleted, just hopeful.

Agreed. SimpleNote is a great product too.
