If they made it that big it'd no longer be portable. For something to be useful as a tablet you need to be able to hold it with two hands.

And no, it's unlikely the official name will be iPad Max, but it's amusing to call it that. It's a simpler way to refer to it than "bigger size iPad" or some such clunky description.

How is a 12.9" tablet portable either? I think this would be better as a powerful, touchscreen device that can be moved, but not be used in the same portable ways as an iPad.

That is why I'd need to see a 12~13 inch tablet first before deciding whether or not I want one. I think that size is skirting around the edge of portable / non-portable, so I want to make sure it is portable before I buy one.

As for touch-screen devices that can be moved, those have been around for years in the form of all-in-one computers with touch enabled screens. We tried one, and after the first few days, the novelty of touching the screen to control the computer wore off, and it just got used like any other computer. Granted, that version of Windows wasn't optimized for touch, but how well are the current Win8 touch-screen computers doing? I suppose the device you are envisioning would be lighter and more portable, with a totally touch based interface, but still, when monitors get larger than a certain size, we don't hold them so close to our faces, and at that point, touch isn't so useful because they are too far away to control easily by touch.
 
If Apple ever decides to make a large iPad in 13, 15, and 17 inch sizes, they'll need 64 bit applications to match. I would like to see Aperture, Final Cut Pro, and Logic for this larger iPad. Also AutoCAD, 3D apps, and any type of authoring would be really useful for these size devices. With these apps, we would also need pressure sensitive styli with palm rejection, external storage of some type, and some carrying solutions. The whole point would be to simplify content creation and give the ability to have a larger work surface to get stuff done when not on a smaller iPad or iPhone.

I would love a 13" iPad to be able to run Photoshop, Aperture, and Photo Mechanic, away from my office, sipping coffee at Starbucks and doing my work.

I agree - the regular sized iPad now is barely considered easily portable so hwo does adding multiple inches and oz of weight help the portability cause?

I think the regular size iPad is plenty portable. Not as portable as the Mini, sure, but I wouldn't call it "barely" portable. I can manage to carry one in my bag all day.

Now, a 12 inch tablet, I'd say would probably classify as barely portable. On the other hand, technology keeps making things smaller and lighter every year. Eventually, maybe we'll get to the point where a 12 inch tablet could be as light as the current iPad mini. Which should be the point where such a thing would make sense.
