Would this work in a late 2008 MacBook pro? I know it's not exactly the right specs but they would still fit in the slots
You are quite a bit behind the spec listed here. There is no guarantee your board will be able to down clock the ram that far. Plus I think it's DDR3 and yours is DDR2 - these differences are enough that I would try and source the appropriate ram.

there are some reviews that say they don't work with Macs. The GSkill team has always linked them to a (more expensive) 'mac-memory' which they guarantee to work with MacBook Pros.
I am considering upgrading my ram to 8GB. I have never done anything like this before so I want to be safe. Will this void my applecare?
There are a couple reviews, but just as many as there are for PCs who were having problems. It sounds like many of the reviews are from Mac users who have 2009/2010 Macs that didn't support the DDR3 1033 speed.
