In some 3rd party apps (like YouRace) you can press the 2 buttons together to mark segments.
It's not as convenient as the action button, but way better then Apple double tap
I have tried that, but's it's inconsistent to get the lap to start/end, something it just goes to the Home Screen because it's hard to do it when you are running and are just coming to a stop.

Hmm…. I’ve set my AWU to “new interval” when pressing the action button.
When pausing, there I have to press 2 buttons, then I swipe right to end workout.

It needs some "training" to press buttons simultaneously.
Unfortunately, Apple doesn' give us the choice, on non-ultra Apple Watches, the only button interaction allowed to developers is the "2 button press".
