So the main reason I'm getting a mac is to develop for the iOS platform - iPhone and iPad.

Second reason is that my 18.4" Acer is .. more or less dead so I need to replace it.

Main programs that I'll be running Photoshop CS5, Cocos2D for iPhone, Unity 3D, Sony Vegas, Flash CS5, Ableton Live.

I'll be playing games, though on Windows mostly through one of those programs that .. lets you.. Not really going to play the latest games at max. I mainly play MMOs on my laptop anyway. Anything is better than the 9500M GS that's in my Acer.

I was looking at the Macbook Pro 17" with the i7, 4gb ram, 500gb @ 7200 rpm, high-res antiglare widescreen.

Just wondering if the 17" is the right choice (along with the i7) or if I should go 15", i5 or maybe 13"

Personally, I would get the 15" because its more portable.
If you don't need a laptop, maybe you should get an iMac. More power for less price.

im also an iphone dev so i got the 17" i7 500gb 5400rpm then i upgraded too 256ssd.

15" is to small when developing, unless you have an external monitor.

also you will need to download xcode to make iphone apps when u get the mac XD

I have a 15" with a 22" external monitor and also convinced that even with the 17" you will still need an external monitor. The older iphone screen were 480x320, but the new retina screen and the iPad screen are 960x640 and 1024x768 respectively.

I keep the laptop screen for xcode, and the external for Interface Builder and the Simulator, so I don't have to switch back and forth.
