Thank you for all the feedback guys! I'm not as worried about the 16GB now, although I may call the local AT&T store during my lunch break and if they have a 32GB Space Gray left I may run by and grab it, and cancel my apple.com order... We'll see.
I really think I could get by with 8GB. I use 1.5GB now. Some of this has to do with unlimited data, having a tablet with me, zero games and I move photos to dropbox. I think there are currently 10 photos on my phone.
I realize this could change in the future when Verizon decides to kill unlimited data.
Videos and photos I traditionally don't view anymore go on an external hard drive and is de-synced from my phone, as well as music, apps, etc.
I have roughly 1.87GB free.
I've never had an issue with the 16GB but do have to manage it a bit. Photo removal and deleting some big game files after beating them usually does the trick.
The biggest shift was using Spotify and Google Music. My music usually would occupy more than half of the space, limiting how I use the phone. I realized I don't need to have my whole collection on there (which is larger than 16GB anyway). So I uploaded my entire collection to Google, they give you 20,000 songs for free and use an app to stream when I want.
With Spotify, syncing music for local playback is so easy that I can add music quickly for the ride home when I have no connection on the subway.
So if you change the way you use apps, you can absolutely make 16GB work really well.
As the camera on the iPhone gets better, I find myself using it more. My 64GB gets full a couple times per year and I have to clear it off. Right now I'm sitting at 768MB availabletime to clear some space again! I cleared right before iPhone 5 came out when I had a 64GB 4S, sometime last spring, and again now. It probably doesn't help that I always take HDR photos so that I can choose the better one, but instead end up leaving both on my device because I don't have time to clear them off.
I'm also a bit of an appoholic, having more apps than I know what to do with because I'm a UX/UI geek and like trying different designs. I also pick up a lot of games when they go down to 99 cents or free and never end up playing themor worse I play the first few levels and then can't justify deleting it and losing my save progress. I only have a 32GB iPad 2 and I don't use it much anymore because of the non-retina screen but also a big reason is that it's always running out of space. I used to play a lot more of my games on the iPad and I think that is spilling over to my iPhone now. I prefer the bigger screen so I think I'm going to pick up a 128GB iPad 5 next month and clear most of the more complex and large games from my iPhone. That will probably save a good 20-25GB alone.
If the iPhone ever gets a higher megapixel sensor, I think I'm doomed. If the iPhone 6 is 12-13MP then I'll get the 128GB model and hopefully bet set through 2016.

I really minimalize my music collection on the phone since my iPod pretty much goes everywhere with me and that contains everything. I only put stuff on there that I really enjoy or will play with/for friends so it's only like 200 songs total.
I have ~5 pages of apps but don't really have any huge ones like infinity blade or some 3d racing games, etc.
There are about 600 photos on the phone but I maintain/delete what is stored on the phone since I use Photo Stream. Anything that isn't a "good" shot, I'll just delete it from the phone and keep it in iCloud.
I guess for those without a dedicated iPod, 16GB would not be enough. I'm fine though, and will be getting a 16GB 5s. $100 dollars extra for 16GB of space is totally unjustified (imho) considering a 16GB SD/microSD card costs like $15 nowadays.
16 gb is no problem for me. In fact, I probably could get by with an 8 gb at this point. I have itunes match and rhapsody. Don't play many games, really only candy crush. My most and really only used apps are scorecenter, yahoo fantasy, twitter, facebook, instagram, vine, and a news app or two. Easily under 16 gb.
