You say that she's expecting to be overwhelmed, but isn't really looking for a handmade gift or ordinary jewelry. I think she's expecting you the pop the question, man. :D
 
Get a ring with a diamond on it...ask her parents a certain question of taking their daughter for life, and loving her...then ask her the same question...

I would ask your uncle and see if he is equipped to help you make the jewelry box. It wouldn't take you more than a good days worth of work since they are fairly compact. Doesn't ever hurt to ask and see if he would mind being of assistance.

I will second what some other people have said about looking at etsy.com they have some really nice cheeky girly stuff that she might like.

I would possibly stay away from electronics unless you are absolutely 100% sure she wants it and has wanted it for quite some time. IE you have been together and she has talked on multiple occasions about wanting an iPod Touch. Otherwise she might not take kindly to being given gadgets unless she's mildly geeky.

I'm going to add my support to the "experience" idea over a thing. Make a lasting memory - that's much more valuable than any specific item. Of course you could give her jewelry or something there and then so you don't show up "empty-handed", but then tell her to set aside some specific day where you can surprise her with an adventure.
