Any way to make it delete messages instead of archiving em when set up as an exchange account?

you can only move them to trash.

how is this going to work? will messages be instantly pushed? will the app need to be downloaded and it checks every few minutes?

Use Google Active Sync for an exchange-like service, or just use the normal in-built GMail account option. Either will allow you to fetch or push mail.
