So, I have a 2015 MacBook Pro 13" which I am still running Mojave 10.14.6 on. I don't wish to upgrade beyond this for now and everything still works as it should.

However, just recently Google seems to have reverted to an 'old style', and I'm not sure why. It looks like this:

Just wondering if anyone has any idea why this has suddenly happened? Google still looks as it should when I open via Firefox.

It has to do with the browser's user-agent string, which basically tells Google which browser you're using. I get the same look if I change mine to be:
Mozilla/5.0 (Macintosh; Intel Mac OS X 10_14_6) AppleWebKit/605.1.15 (KHTML, like Gecko) Version/12.1.2 Safari/605.1.15

It's anyone's guess as to why Google is serving up an old page. Could be a bug on their end. Or maybe their latest changes aren't compatible with older versions of Safari, so they're falling back to this version.
