All 3 are great, but they get better in succession. GTA3 was great, Vice City better, and San Andreas even better.
 
My Favorite was Vice City, though San Andreas had some great gameplay additions. The only reason I have a favorite was more of style. I also liked the lead character of Vice City the best, mostly because well....his particular character. He's got to be the most "take control" kind of character I've seen in the series. However, the biggest reason? The 80s. Vice City nailed a good bit of the 80s pop-culture like hardly any game or movie did before. (At least, ones not made in the 80s). Playing in Vice City was like taking a time machine through hollywood glasses. It was a little over the top, but it really had the pure essence down.

Any more authentic, and they'd have to dub Vice City an 80s sim. It's a very different world than what the other GTAs had. However, the other GTAs seemed a little easy to come by because more or less, they were a reflection easily related to in today's world. With Vice City, they had to dig into a culture and feel that just plain doesn't exist anymore.

Kind of like how Red Dead Redemption puts you in a world of the Western Serial. It's a nice little reflection on living in that era. The main difference is that we have enough people, who lived in the 80s, who can pretty much vouch to the amount of stuff Vice City nailed.

I am an 80s guy, so will probably go with Vice City...any major differences with San Andreas in terms of graphics/content/gameplay?

Well graphically VC is a lot more artistic. The skyline fades to pink and theres a lot of neon around. The map is a lot smaller and is more like a large town than a city (of which SA has 3 massive cities). You can't swim, there are way fewer vehicles. The art style to SA is more realistic but it does have higher spec requirements.
But the soundtrack and feel is great.

SA adds mini games too and you can adjust the look of your character through exercise or eating at the wrong places. It's more like an open ended RPG in that regard. It's also set in the early 90's.
 
My fave story: Vice City. It's all so very 80's.
My fave environment: San Andreas. So much content and such a huge and varied map. You can really get lost in it.
If you have any fondness for Snoop Dogg, Dr. Dre, Menace II Society, early 90s rap stuff, Compton, etc, you will LOVE San Andreas.

Don't understand that culture nor do I have an interest in it but 4 letters - SFUR ;).
The public radio stations are great too, as ever.
 
Just got San Andreas and it runs really well on my iMac with the graphics turned up to 11.

Anybody know of any decent gamepads that are similar to the PS2 / PS3 layout?
