I used to be an evangelist of Evernote, but at the same time I'm a believer of minimalism and can't stand that Evernote becomes more and more bloated every year.
My plan is to compromise on features and switch to Notes.app. I'm gonna enjoy relying on fewer 3rd party services and I have big hopes in the new iCloud backend of Notes.app.

And luckily for me, I never have to touch Android or Windows, so the migration is gonna be pain free.

It'll kill Simplenote for me, but not Evernote. You can get more details and collecting of info in Evernote. Notes/Simplenotes where just that, for simple note stuff that I needed until I didn't and got deleted.
 
The notes cross compatibility issue can be helped by using the web interface. It's not perfect, but a workaround
 
The scanning > OCR > searchable PDF index infrastructure of Evernote is extremely efficient and advantageous. Their software isn't the most fluid or stable, but I can't find a better paperless system that allows me to search so easily within PDFs.

I use Scanbot. It does OCR and works well. Currently I have it upload automatically to Evernote but will likely change to upload to new Notes.

I actually had a problem with Evernotes Scannable app when set to save as PDF it would not add OCR (which evernote does on it's server). Others had the same bug.
 
The one thing I dislike about Onenote on the Mac is all the adjustable windows in a note. Maybe it's a little bit nitpicking, but I just prefer the clean look of Evernote. I've been playing around with the new notes app on my iPad with iOS 9, and I'm seeing there is still no option for alphabetically organizing notes. Such a shame!
 
I'm really looking forward to the new Notes app. The checklist feature looks great.

Also, not sure if this one has been mentioned already, but I would like to see a Family shared Notes folder.
 
Anyone notice they haven't changed the size limits from iOS 8?

This is one of the biggest issues for me, but not even OneNote for OS X can do this. You can't back up an entire notebook easily and the export as PDF is buggy and cuts off my note.

Submit feedback to Apple to increase Note size limit (especially with all the new features coming in iOS9). I just submitted this request.

Many of us have been. For years. It's clear there is an intentional reason for it, just can't work out what that reason is.
 
I'm using Evernote now but HOPE to switch back to the new Notes. Syncing will be the key for me. I switched from Apple notes due to poor syncing and no check list type features. I haven't seen the new Notes since I'm not a tester but have high hopes I can switch back.. Evernote is great, it's just way more than I need, and that color is awful.

If your notes is large enough, after creating pdf, file size would be an incredible number, which is hundreds of megabytes. I forgot where i found this issue when using. The only thing I can remember is this happens on onenote.
 
That video convinced me that I may indeed be able to switch from OneNote (the folders and share sheet are key).

I love how quickly Notes loads, and I currently use it for things like shopping lists -- but not "long-term" storage of reference/info notes, due to lack of organization options and other features which I'm glad they're now adding.

One thing I don't love is how Notes formats any time, date, or string of numbers as a clickable link. So you end up with all these messy yellow links when you would prefer plain text.

In the windows version, there is an option to export an entire notebook as a OneNote archive files for saving. There is no feature like this in OS X's version. There is an export as PDF, but if my pages are too big, it only makes one standard sized piece of paper and cuts off everything else. Plus, it's too tedious to export every page one by one.

I know that feature, and I tried once before. I don't know if I install acrobat, could I use acrobat to generate pdf file.
