I'm on 7.1.2, but I did that straight from the latest iOS6

Where do you find the OS to delete? I've looked under Usage and don't see anything but apps.

I think what happened though is that I said OK to the update notification when I moved the phone this morning.

Are you saying iOS 8 would have downloaded, but not updated until I answered another prompt? (now I can't remember what I did with 7 last night!)
On its own it should only download and nothing else, if you actually went through some prompts then it can depend and download and then install after that all as one, or possibly prompt you for the actual install once it's done downloading.

I'd like to think I only hit one prompt while moving it half asleep!

At the moment, if I go into Software Update, it says Download and Install.

A week or so ago I actually got a prompt for 7, but it was a popup.

Sounds like it's not even downloaded in your case. So if it ever does (on its own) you should be at least able to delete it at that point.

Yup, this ^

If it does happen to download you will see it at the top of the apps under usage. Simply click on it and press 'delete'. If it's not there you don't have anything to worry about.

Also from my understanding an iOS update doesn't download onto your device unless you have both:
- plugged in
- connected to wifi

Right. It was downloading and it said 45 minutes remaining so I turned off wifi. Turning on wifi caused it to restart again. I don't have any updates sitting on the top of my usage list.

Thanks!
