you're right. i'd actually prefer to incoporate more veggies and/or starches. the problem is that i'm on my own. even my wife doesn't help. there's only so much you can do with two hands...
I was thinking about complaining about the lack of veggies until I realized that you have probably worked for hours in the kitchen to get the meat done (and kudos for that - it looks just perfect). Still I would probably enjoy fewer courses with more side dishes, if only for the variety of tastes.
