Like iMessage where the feds got it despite end-to-end? Guess what? You sync your iMessages to iCloud backup you just opened the door.

But Apple doesn't tell you that. It was found out real world in the courts. Apple marketing speak is typically not full reality.
There is no point. These people are outright delusional about what Apple claims to do.

The camera has reliability issues even when inside. My biggest concern is how the crappy $200 “doorbell” goes offline when the sun hits it.

It is VERY much Logitech’s fault that they advertise a doorbell as being compatible outdoors and direct sunlight causes it to overheat. Never have I seen a doorbell stop working when the sun hits it. I also don’t know anyone with a house that has the doorbell inside either.
POE is a power source and network connection for cameras. Example, camera on my garage, 80 feet from anything. 100ft. Cat 6 cable works nicely. USB extenders would not be practical, but possible depending on where the garage power source is. Wifi could be done but would need an extender most likely. Apple HomeKit should say, works well in apartments. HomeKit needs substantially more hardware solutions.
 
I don't know about you, but I like to have real control over who can view videos recorded in and around my home, not just a promise in a privacy policy that can change at any time. I also don't like the idea of Amazon or law enforcement having access to a complete visitor log recorded through a doorbell camera.

In the presentation it sounded like they have trained their neural networks to recognize packets in addition to people, animals and vehicles. You'll probably get a "package delivered" notification instead of a generic "person detected".

Nope. You're wrong. It's literally detecting packages. Rewatch the WWDC.

If 2TB gives us unlimited cameras they might as well give us 24/7 recording or allow you to separate notifications from recordings. For instance, I could set recording all motion and notifications only for people. Notifications for all motion is a disaster. Also, they need to revamp the timeline.
They give unlimited cameras because they know there's only so many cameras that can be plugged in in a house which would probably equal to the bandwidth of 1 camera recording 24/7.
