If I upgrade the HomeKit architecture, will the Monterey-based Home app stop working? What about Catalina?

I know that the newest OS versions are required for the update, but what about connecting after?

Yes, it’ll stop working in the older OSes. There’s no going back once you upgrade. You won’t even be able to recreate a new home in Monterey or Catalina.
