How do I send an automated message when someone emails me?

I just emailed someone and immediately got an automated reply saying "I'm out for Thanksgiving week".

Just curious how I would activate this in Mail (if it's even possible). If I can't configure it in Mail, how would you configure that in a program that does allow it?

Generally that's a mail server function. If you have have an exchange account, and use Outlook, then there is an Out of Office Assistant. Using gmail, goto the web interface/settings and set your vacation response. Who is your email provider?
