The OP is wanting it to do it "automatically" which I am pretty sure is not going to happen.

Which is surprising, since this IS a programmable choice on Garmin’s vivosport (costs about 1/3).You can program the same hours as Do Not Disturb for the wrist raise. Seems like something Apple could figure out. Do they still employ programmers?

I would like to be able to do this, as any light can wake me, and I’m wearing it for the sleep tracking.

Then you bought the wrong device. I the light from the AW wakes you then . . . .

Unfortunately Apple tends to take a conservative stance on useful-but-niche type features. I'd be surprised if this feature never came up for discussion amongst Apple developers/executives, especially as you say it exists already in a competing product, but apparently nobody has considered it important enough to implement.

Maybe the day the watch features long-distance wireless charging and built-in, native sleep tracking they'll reconsider, since it would mean many more people would start wearing the watch during the night.
 
I sleep with my watch on. I have a good amount of battery left when I get home, so it's no problem.

But it's becoming a tad annoying to have to go into settings to disable wrist raise, and then remember to enable it when waking up.

Is there any way to schedule to turn this function on/off?
I just put mine in theatre mode at night. Wrist raise will turn off and the all alarms will be vibration only.
 
This. I’m also using Theater mode every night. If you want to see time, just small tap and that’s it.

Well, Theater Mode is the ticket, for now. It is quite easy to access...a swipe up, scroll a bit, tap on the drama masks. Don’t get me wrong, I’m loving the watch, it’s beautiful, and I’m easily getting 24 hours+

I wanted to reply as this thread is on the first page of Google results when trying to figure this out. Sorry for the necropost!

It can be done via Shortcuts. Just set these up and it works perfectly when enabling Do Not Disturb mode. No more bright OLED in a pitch-black room just because I moved my arm.

I've also set Do Not Disturb to turn off the always-on display, which is also helpful during the day when I don't want my watch distracting others in a meeting.

Steps:
  1. Open the Shortcuts app.
  2. At the bottom tab strip, tap Automation.
  3. Tap the + at the top-right to make a new automation.
  4. Tap Create Personal Automation, the first choice.
  5. Scroll down to the "Focus" section and tap Do Not Disturb.
  6. Select only When Turning On.
  7. For the action, write in the bottom search bar "watch rise". Then tap Set Wake on Wrist in the results.
  8. In the "Turn Wake On Wrist Raise On" sentence at the top, tap On (in blue; the text is a button).
  9. Set to Off and then tap Next at the top-right.
  10. For me, I unchecked Ask Before Running -> tap to confirm Don't Ask.
  11. Tap Done and then create Automation but the reverse for Do Not Disturb When Turning Off and then Set Wake on Wrist back to On. That way, it undoes this in the morning.
There may be cooler / neater ways to automate this, but I just use Do Not Disturb set to its auto-configured "until tomorrow morning" and it works out great.
 
You don't even need to go through all the Shortcut stuff to do it. Go to Settings > Focus > Sleep > Customize Screens > Options, and turn on "Sleep Screen" and "Show Time". It puts a very dim screen on your watch with large numbers for time, that will only turn on when you tap the screen. It reverts to your normal watch face at the end of your scheduled sleep time, or when you manually turn Sleep Focus off.
