I see some pics of owners with the Apple monogram instead of initials. How do you select the Apple logo? Also, i see some watch faces with the monogram where it doesn't normally come up as a default customization option. Is there a way to add this, or am I missing something?
 
I think only the Color display has the monogram complication.

To get the :apple: logo, text or email it to yourself from the Mac, where opt-shift-k types the logo, then copy and paste it into the monogram setting in the iOS Apple Watch app. You can also copy it from here, or any source that uses the logo Unicode character.
 
Or you could just copy/paste it from a website in Safari. Google "Apple logo unicode" and you should get a result you can just copy/paste. After that you can even create a keyboard shortcut for it so you can just type it whenever. I have my iPhone set to insert it whenever I type 'applelogo'
 
Kept my initials but did that
