I currently live in Australia and am arranging to buy my friend's iPhone 6s for my grandma who lives in New York. All the bands are the same except it's missing band 30 which is 2300.

Will this cause issues or is this just a minor thing and not to worry about it?

I should probably add that my grandma won't be using the internet or wifi pretty much ever. The phone will be exclusively used for calls, texts and FaceTime only!

Yes, because AT&T is almost exclusively using VoLTE. And especially with an iPhone, iMessage goes through data. FaceTime is through data as well.
 
Voice wise, without B30, you won't notice much as AT&T prioritizes voice calls over data transfer (even if they both use data).

What about FaceTime and texts? Or YouTube? This would be the absolute extent of what my grandma would use the phone for? She's pushing 91 so def not a heavy user. She's currently using iPhone 5c and it looks like Apple recently broke FaceTime on her phone so we need to update her.
 
FaceTime is data, so it might suffer. Texts should be fine as they barely go over 1KB in size.

Anything that does heavy data can be an issue.

Thanks. What does "might suffer" mean. Like would it have connection issues or plain won't work?
