Just curious, is there any reason why the iPhone doesn't do all these things that the Android can? Is it something to do on Apple's end, or Google's end (like, are they saving these features for their Androids)?

Google use their own email protocol for Gmail - this is also what the Gmail app on Android uses. To get it on your iPhone or other mail app, Google have put in place some basic IMAP and Exchange functions that integrate with their own protocol for limited functionality. I don't know if Google allow others such as Apple access to their own protocol - but if they do it would be awesome if Apple wrote this in to their Mail app and done it well.
