I doubt we’d have both as one option would be lying redundant and we know Apple doesn’t do redundant!
At the same time with the ever present options for a passcode or a passphrase there's a redundancy that has been in place there for quite some time.

Is there? face ID and Touch ID are both biometrics. Take them both away and you no longer have any biometric authentication.
 
They aren’t directly comparable in that way because we are talking about two different metrics;

Thats why I said your statement of PIN being more secure is up for debate :)

If you don’t know the pin you will eventually block the phone for a very long time or wipe it entirely.

And if someone does know your PIN or its compromised (not guessed) then the phone can be unlocked ...... much like the PIN on a bank card its only as secure as the user or the environment the user is in (eg being filmed using the bank card or phone PIN), how many people use the same PIN for both bank card and phone ? One compromise potentially gives you access to both.

I've not heard of many ways to compromise someone's face (and yes I know you can compromise faceID while someone is sleeping) but that also involves physical possession of the device.

It's an interesting debate

If you have attention aware set on your device, they couldn’t unlock it while you are asleep. On the other hand, I recall seeing articles where parents said their children were unlocking their parent’s phones with their (the parent) fingerprint while they were sleeping. There were also concerns that the police could also do that to people when they wanted access to their device (not while they were sleeping, of course).

I love the touch ID on my 7+. Upgrading this year to the 11 or 12 series (haven't yet decided) but I won't be using the Face ID option. I get light sensitive migraines so I'll just stick with the passcode on my new phone. I'd be THRILLED if they had a touch ID option on the 12s.
 
It is a bit irritating in the supermarket, as I have my "loyalty" card in Apple Wallet and I also use my phone to pay. Luckily, iOS 14 at least seems to know I'm wearing a mask and immediately asks for my passcode rather than trying multiple times to unlock via FaceID first, which I think iOS 13 did.

I try to only go stores that use Apple Pay it contactless pay with my debit/credit card. I don’t want to touch any keypads.

There's the passcode or passphrase that's there to do the same job of securing access to the device.
 
My work is bringing it in anytime we leave the desk.. So chances are will be fair often than normal
