There is no such folder in 10.11 and I didn't find the Air Drop app anywhere...
Maybe it's not compiled as an app, like in 10.13.

After doing a little research, it appears that the method only applies to Sierra or later. For earlier versions, there appears to be an alternate method, using Automater. Scroll down to "Adding AirDrop to the Dock in OS X" on this page to see the instructions.

Checkout Dropzone at aptonic.com. You setup your own grid of folders, apps or Finder actions and can then drag and drop a file to Dropzone ,in the menu bar, which opens that grid. I use this a lot to move, copy, print, email or airdrop files.
