For Me, It's Mainly About the Loss of Functions

What is it with people wanting to use old software just because they aren't used to new aesthetics. iTunes is much better in 11 than it was in 10.

There's that, of course. But for me, it's mainly about the loss of functions. The loss of iTunes DJ is a biggie, as that was mainly how I used iTunes. The ability to see the last X songs played, the next X songs coming up, and being able to delete, add or rearrange upcoming songs - I mean, if iTunes 11 can do this, I sure haven't figured out how. Their "Up Next", (or whatever it's called), implementation is opaque - you can't see what's coming, and have little control over it. I become angry trying to use it.
The ability to sync contacts and calendars to my phone is also what I used iTunes for. Recently, they "added" the ability to sync by USB, but until a couple of weeks ago, you needed an iCloud account to do it. I don't especially want an iCloud account, and I'd have to change me Apple ID to get one if I did. I'm also not very confident about this very personal data being secure on remote servers, especially as I'm not handling the encryption functions. And, I've already had a "free" email account and storage space taken from me when Apple decided it would no longer be free, so I'll just pass this round.
I've been using Apple computers continuously since 1986, and I've found that, even though their "we know what's best for you" attitude can be very annoying, they've been right so many times that I always try to give them the benefit of the doubt. But after several months trying to live with iTunes 11, I want to go back to 10.7 more than ever.
 
Can you use iTunes 10.7 still with macOS Sierra? Someone I know needs it with at least El Capitan as he needs to run also Logic X Pro which requires El Cap, but he will never upgrade from iTunes 10.7.
