I had to tap the HomePod in each room with a sensor then go to setting accessories for mine to show up. The stereo pair HomePod minis tap the pair, go to settings, tap speakers, tap the left one (or whatever one has the accessories section once you click it) tap accessories. Then they showed up for me.
This worked for me. Thanks!

All of them are working for me except for one at the Cabin. I wonder, currently have Eve's temperature sensors. Curious if there a HomeKit app that will log the temperature like Eve does every 10 minutes so you have a history of the temperature over time.
 
Nothing has worked for me. Restated HomePod several times. No sensors are showing up.
I did have one that it didn’t work on. It was a HomePod mini in a stereo pair, it said not responding on the right one. I plugged it into my Mac and it said it was on 16.2 so I restored it on the Mac which updated it to 16.3 then I did the accessory thing on that one once it was setup again and it worked. The updating seems to have changed. It doesn’t tell you in the home app which are actually updated. I would plug the ones you’re struggling with into a Mac and see what they say. I would also recommend ungrouping them if you have one that’s in a stereo pair before you restore it, and remove the accessory before you set it up again.

Try plugging it into a Mac to see if it’s actually on 16.3 all mine said they were updated and I found one actually wasn’t
 
Seeds could explain more what you did? I tap on the HomePod mini, then I tap on th gear icon, then what?
Is the HomePod in a stereo pair? If so after you tap the gear tap speakers, then tap the left HomePod and then tap accessories. If accessories isn’t there go back to the two speakers and try the other one.
 
Updated to 16.3 about an hour ago and I still see no sensor information from my HomePod mini. Restarted it, checked the settings, etc. Nothing.

I only have one HomePod, I don’t see accessories as an option to tap anywhere.
 
UPDATE: After I left the settings, I checked from my MacBook Air and they are now downloading!

I've checked multiple times and I'm still on 16.2 on all of my homepod minis. What can I do to "force" them to check for the newest OS?
 
Seems to be working fine for my one HomePod mini and showing both readings from the mini and the Eve Room.

I updated my 3 Minis. It took thirty minutes for two of them to finally finish calibrating. The one that hasn’t finished I restarted after ten minutes. That looks like a mistake as it might have restarted the calibration.

I have an Ecobee thermostat and it doesn’t take thirty minutes for their sensors to calibrate.
 
Note that you don’t need to be on 16.3 on other devices in order to have 16.3 be installed on the HomePod. You won’t get sensor data in the Home app though (I think). I haven’t tried yet if Siri on the HomePod will tell you the temperature/humidity.
Oh I bet this is it. Just checked my watch and it shows data. Updating phone now.

Ohhhhh, I am such a doofus. That must be it. I haven’t updated any of my other devices.

FWIW, I can now confirm that Siri on the HomePod can tell you the indoor temperature and humidity without any other device having to be on 16.3 (I’m still on 15 on other devices). On other devices not on 16.3, Siri however tells you that here are no accessories that support that. So basically you can ask for the temperature/humidity only when you’re in the respective room.
