I think Apple will use the 7970m. It's better for professional apps than the 680m, and on par in gaming.

What makes you say it's better for professional apps? I was under the impression that Nvidia was much more supported by Adobe in their CS apps. I'm not really doubting you, just wondering.

The 7970m would be a fine choice, and I would welcome it. The main problems with predicting it are:
- It was ready to go in early April. Apple could have delivered a spec bump with Ivy Bridge & 7970m in the same chassis & screen by May 15, which would still be later than the normal refresh cycle, and then prepared for a big-bang Retina redesign next year.
- Apple appears to be moving away from AMD; the selection of Nvidia for the MBPs is telling. That the 680M wasn't available until July goes quite a ways to explain part of the wait.
 
And, the most reliable of all:
  • I give up waiting and buy a 2011 iMac

Ive already bought the 2011 iMac, plan is to wait and see what they do in 2012, wait for the 2nd revision of it in 2013 when they find and fix all the 1st gen bugs (think screen yellowing, hard disk drive over heats, faulty graphics chips, etc that have plagued apples recent systems over the last 5 years or so) and relegate the 2011 iMac to a bedroom TV at that point.

This would be a neat trick, unless you just mean iTunes/Hulu/Netflix.

Elgato EyETV DTT actually :D but also iTunes/NetFlix/Lovefilm (especially iTunes, Almost maxed out my DroboGen 2s capacity, 4x4TB drives don't go far enough, need 5TB drives already)

It Does annoy me that to connect a PS3 up to it ill have to blow £250+ on a HDMI to Thunderbolt converter.

As far as I know, this doesn't actually exist at any price. I'm aware of screen capture devices around that cost, but to my knowledge they introduce 500ms+ of lag and aren't suitable for game play.
