How would you use 128 GB on an iPhone?

As Plex Server for the iPad.

How do you do this? I'd like to get an iPad with low data but still view all my pics and movies on it I have stored on the iPhone?

Podcasts - 30GB.
Apps - 15GB.
Photos synced on - 5GB
Music - 20GB
Synced video - 30GB
Space for video - 20 or so GB.

Very roughly video is about 1GB/5 min? (200MB/min or so).
