Whatever the bug might be, it does not appear to be limited to iOS. Several times over the last few weeks, I've seen this substitution in Messages on the Mac. On my iPhone and iPad the correct character "I" appears for the same message.

I had this problem back in October. Doesn't seem annoying until you realize how many times "it" can be used in a conversation. Deleting all the conversations in Messages that had "I.T" seemed to fix ... it. Haven't had the problem since then. My guess is it's a problem with their differential privacy keyboard spotting trends and slowly propagating them across devices.

Looks like Apple increased or changed the way it’s crowd sourced dictionary learns words to it’s own detriment. Overall I like the feature, so long as I can re-teach it the words I want. It should only take one or two times for me to select “it” or “is” to know that it is my speech pattern. Had the same issue with the I [A] issue.
But you probably ought to be letting it autocorrect your "it's" to "its"...:)

Perhaps one day Apple, Microsoft, Google etc. will get out of the 1980's and start spell-checking more than one word at a time so that context is taken into account. Right now, I.T. snot happening.

I never have a problem with it doing that to me I am actually speaking right now into my phone I am not typing it is fine I don’t understand what the problem with it is

All you have to do is choose "it" and it puts in what you typed. No big deal. But I have not had this problem on my 10.

Siri-is-stupid-gate. I’ve seen auto correct fail to recognize legitimate words too.

Siri does suck and if it doesn't get any better and iOs never gets grouped notifications my iphone days maybe numbered (again). I guess I can live with Siri but not having grouped notifications is a huge annoyance.

Apple is in the stone age compared to google on that point. How hard can it be to add predictive texting for all languages. Google even supports multiple languages at once and has speech recognition for 119 languages now. It's like they add something for 5 languages and don't touch for 2 years, then add 3 more...

Is this just with the quick type keyboard or autocorrect in general? How do these things happen?!?

Only problem I’ve had with autocorrect in iOS 11 is it randomly deciding to capitalize words in the middle of sentences from time to time

Hundreds still isn't much. Heck, thousands isn't a significant number when there are literally millions of iOS 11 users.
