I can't see how the Xoom and other Honeycomb tablets could have an effect on an iPad 2 released soon. It takes a lot of time to design and produce a new piece of hardware, especially on the scale that Apple works in. The specs of iPad 2 were probably already planned out when iPad 1 was launched. I think the earliest we see any reaction is the autumn update that some people have speculated about.
This isn't to say that I think the iPad 2 will be a poor update, it's just that if it gets a dual-core processor it will be because that was always the plan, not because the Xoom forced them into it.
