I'm the same. Not a single Windows machine I've tried out there feels as nice (especially the touch pad area). Apple just really nails these things.
Even many years after the first PowerBook. Nobody could still not make good experiences

I just can’t use anything other than apple MacBooks.

As soon as I see it or open other laptops than Apple I just refuse. I just start experiencing how bad rest of the industry is.
I had a asus zenbook powered blue that was incredible last October, .....out performed my MacBook M1
someone else wanted that really bad this February, $300 more than I paid.

I use a MacBook M1 now as my racing bike has better $300 parts!

win-won-LOSE?

As far as build/design quality, yes. Nothing will match the Apple aesthetic.

For gaming and dev work, I'll lean on windows only because I need the Nvidia Cuda Cores. Other than that, the MacBook is my #1.

Then you really haven't given the other laptops a chance as you have by your own admission, not used the other machines. Your choice, but your judgement is significantly biased. I have used many other laptops, Windows based, and a few of them were quite good. As good as anything Apple has produced. I know many people who would say the same about using an Apple product.

you are correct. I went to see pc laptops and they were horrid in comparison. I was shocked by the cheap plastics. That being said there are macbook similar options. Microsoft Surface seems a nice option.

The biggest issue with the the Windows touchpad seems to be 'tap to click'. I turned that setting on on my MacBook, and was immediately "Ew, feels like a PC trackpad". Now when I have to use a windows PC I know what setting to turn off to make the trackpad less hyper-sensitive and more usable... still, I tend to have a mouse connected to Windows laptops at all times, while I've never even considered it on a MacBook.
