Which ones of these won't she be able to tell is running?
If you need to hide something, you can remove the dock icon and launch it at login hidden too.

I have not tried this, so I am not sure.does remote desktop save what is going on so I can see it later? How does it do this?
If she has an Admin account, create a new Admin account. Also would it ever pop up on the computer I'm trying to monitor showing it is active or that there is an update etc?
I have not tried this, so I am not sure.
But what you can do, is have it running on a small window on your desktop. When you see something happening you can enlarge the window.
If she has an Admin account, create a new Admin account.
Change hers from Administrative to Managed. Then use Parental Controls to limit what she can do application wise including updates.
Then when she is not around, you can log into the Administrative account via ARD and do the updates, or just sit at her computer and do them.
This logKext seems to be the best so far, but I can't find any detailed instructions of how to work it.
I'm not even sure how to install it. Which computer do I install it in?
I tried logkext (just for curiosity as nobody else uses my laptop its pointless for me) and it works. Its a sensitive topic because this will also show you any username and passwords that are typed. All you need is admin rights and the admin password on the computer. Unless she does a search for "logkext" she wont find it. Once its actvated you just open terminal type in a couple of commands and the file opens for you to look through. Full instructions come in an file with the app.

Just tell her that you want to take over updating the computer, and are creating a new account to do that, and turning hers into a managed account and limit her access to some of the utilities. That won't work with her since she knows she can update the mac herself. She will know something is up right away. She's pretty smart.
I'd prefer a free one if anyone can find one. The os of both computers is leopard.
So, you don't want her to know that you are spying on her? How about telling her that you are going to be installing monitoring software on her computer and that you don't want her doing anything on it that you wouldn't approve of? She might learn to trust you more if you are forthright with her than if you are sneaking around on her, the very thing you believe she is doing to you. That won't work with her since she knows she can update the mac herself. She may be pretty smart, but you want to keep her from being really dumb, correct? She's pretty smart.
Well said. So, you don't want her to know that you are spying on her? Beginning to look like this.It looks like your problem is not software related.
