I also like the freedom of leaving my phone behind if I run a quick errand or two.
 
The health and fitness trackers.

I'd be way less inclined to get up and move if I didn't have reminders or a log of health data to look back on.
 
There are lots of reasons I like having an Apple Watch, but I’d say my faves are the heart features, keeping track of my movement and calories burned, not having to take my phone out to the barn, and being able to ping my phone when I leave it sitting somewhere.

Are you into fitness/gym?
 
Fitness, workout tacking, hiking/trail-running maps, timers, alarms and weather. I barely use the smart features and never use the watch to reply to a message or stream music/podcasts. I don't think I've ever connected my headphones to my watch, and I've been using an Apple watch since 2017. Never used Apple Pay on it, either.

Only notifications I get are calls and messages, but it's the same on my iPhone. I hate, hate, hate push notifications.

1) being able to turn music up/down on the digital crown. I use this all the time.
2) vibrating alarm
3) activity tracking
4) EKG (it actually found an issue)
 
Apple Pay and Apple MFA. I also like having weather and time zone complications and notifications but those are the two major features I would miss.

Not really. I can't quickly log into my Mac using my phone that requires the watch.

Also, the watch unlocked is on my wrist and my phone is in my pocket. To use the phone I have to take it out of my pocket and unlock it. That is not very convenient for Apple Pay or quickly checking the temperature or the time in London.

A lot of things; the overall Apple ecosystem integration is the reason I ever got an Apple Watch. I recall when the Apple Watch first released, I thought to myself

"That is a really cool accessory to the iPhone, but it seems to only be an accessory."

Nowadays, it is more of a fully integrated companion that keeps getting better with each Watch OS update and release. I could definitely do fine without an Apple Watch, say I got a Coros or Garmin for the run tracking, that would certainly suffice. But man... I would miss all the other functionality very much:
  1. Walkie Talkie (I use this all the time with my kids)
  2. Turn by turn navigation
  3. How it acts as an alarm companion so I can easily hit snooze on my wrist... every, single, morning (easily the best feature of the watch).
  4. Apple Music/Podcasts
  5. Apple Fitness (It's actually really good now, especially for running).
  6. Any other smartwatch feature you can think of, the Apple Watches trounces any other watch.
 
I‘ve gone back and forth between wearing an Apple Watch and a traditional watch and the main thing I miss when using the latter is being able to see at a glance whether a notification is important or not.

There are a few more things I find neat, like the fact that it shows you how much you‘ve walked, or being able to check the weather forecast for the next couple of hours. But notifications are still the main draw for me in terms of utility.
 
Weather complications, timer complications, an OTP complication, the express transit card / Apple Pay, and text and call notifications. I think the watch really shines with things you can complete in 3 seconds or less. Much else becomes easier or faster (or both) to do on my phone, unfortunately. I think this is a hardware limit of the screen size and our fingers.
 
for me, it's just the watch aspect (time and date/day), the ability to see it easily in the dark, with so many different face possibilities with health info at a touch (i.e., those things that can be done without tethering to the internet, wifi, or an iPhone)...

I'd absolutely miss not having to pull out my phone whenever a notification/call comes in. It's just SO much more convenient this way.

BUT... the thing I'd miss most is paying with my watch. It's so convenient. I also have a a credit card rewards points set up in the wallet and can use that for purchasing at certain locations. I can't remember the last time I pulled out my wallet for shopping or purchasing. In fact, I won't shop somewhere if they don't accept paying via my watch/phone.
